RED, WHITE, & BLUE YOGURT BARK (DAIRY FREE)

Memorial Day means school is almost out and summer has arrived!

Summer is busy, but holiday weekends hold a whole different kind of busy! They can be so fun, but are often jam-packed with hours in the sunshine, late nights, long days, and social outings that include to an excess consumption of processed foods, sugary treats, and sugary (sometimes alcoholic) drinks. By the end of the weekend our bodies might be saying, “ENOUGH!!”

And then come Monday (or Tuesday if you’re lucky), your brain fog is through the roof and you are exhausted.

Don’t get us wrong, we are all for the fun and games, BUT we are here to remind you that you can celebrate smarter. Taking a few action steps to reduce the burden on your body and its systems will make a HUGE difference, and allow you to cruise through the holiday weekend, and not feel rough at the start of your next work week…

7 TIPS TO FEEL GREAT ALL HOLIDAY WEEKEND LONG…

  • Get a little bit of movement each day. Summer mornings are perfect for long walks or a run around the neighborhood.
  • Lose the bun at the BBQ. Eat your meat with a fork & knife on a bed of veggies (i.e. lettuce and tomato). This will increase your vegetable intake and decrease your consumption of processed carboyhydrates.

  • Drink LOTS of water especially if you are out in the sun.

  • Get adequate sleep.

  • Spend some time in the shade when you are spending hours outside.

  • Bring something to the BBQ or party that is health — maybe a salad or veggie tray with hummus.

  • Dessert? You’d be surprised at how satisfying fresh fruit is, especially when it is in season over the summer. Opt for the fruit or, make a dessert that is free from processed sugars, chemicals, dyes, and other unnecessary junk.

This Red, White, and Blue Yogurt Bark is the perfect recipe for a busy weekend -- it is easy to put together, nutritious, and tastes great!

PS - Save this recipe for all of the patriotic holidays to come, and for when you need a quick, healthy dessert!

INGREDIENTS:

  • 1 Kite Hill vanilla almond yogurt (or 1/2 cup of full-fat vanilla yogurt if you tolerate dairy)

  • Handful of organic blueberries

  • 2-3 sliced organic strawberries

  • Unsweetened shredded coconut to top

  • Additional optional toppings: nuts, seeds, cacao nibs, other fruit

INSTRUCTIONS:

  1. Line a baking sheet with parchment paper

  2. Spread the yogurt evenly to make a relatively thin layer

  3. Rinse blueberries & strawberries (slice as needed) and place onto of the yogurt layer

  4. Sprinkle with shredded coconut (optional)

  5. Place in the freezer for 2-4 hours or until completely hard

  6. Keep chilled until you are ready to serve & enjoy!

NOTE: Double or triple the recipe for larger group gatherings
