Maple Roasted Delicata Squash

Did you know that there are over 100 types of squash?

The two most common types of squash are "winter" and "summer" but those are simply blanket terms.

While summer squash varieties do not store for long, winter squash varieties have a hard rind, allowing them to be stay well for a long period of time, months even.

One winter squash that can only be found at the farmers market and produce section for a very short period of time during the fall is Delicata squash. Holly ensures that the root word "delicate" is very fitting for how great and precious this root vegetable is when roasted with a few simple ingredients.

FUN FACT: YOU CAN EVEN EAT THE RIND!

@Holistichealthbyholly shared her favorite way to prepare Delicata squash, and we can confirm that it is worthy of a fall staple.

INGREDIENTS:

  • 2 Medium Delicata Squash

  • 1 Medium Red Onion

  • ~ 2 T Avocado Oil

  • ~ 1 T Maple Syrup

  • 2 t Rosemary

  • Pink Himalayan sea salt

 

INSTRUCTIONS:

  1. Preheat the oven at 425 degrees F

  2. Place chopped Delicata squash, red onion, Rosemary, Avocado oil, and maple syrup into a large bowl and mix well

  3. Spread vegetables evenly on a large cookie sheet (or two) and sprinkle generously with Himalayan sea salt

  4. Place in the oven for ~ 15 minutes, flip/stir around, and leave in oven for ~ 15 more minutes or until the squash is tender and browned

  5. Remove and enjoy!
